Diet Quickie: Spiralize It

By eating less carbs and more veggies. But having the same old vegetable dishes were starting to bore me.

Until I started spiralizing. In the last few months, my spiralizer has become my most used piece of kitchen equipment. It wasn’t expensive, doesn’t take up much space, is easy to use and clean up and gives me an infinite number of ways to prepare my vegetables. Zucchini noodles with fresh tomato sauce or a simple aglio e olio. Or something fancier like this red curry coconut chicken dish over sweet potato noodles.

My husband loves it. My kids love it. And I love it.
