My Chocolate Pudding Fix

My Favorite Chocolate Pudding Recipe

What you’ll need:

·      6 ounces of bittersweet chocolate (chopped or broken into pieces)

·      ¼ cup of corn starch

·      ½ cup of sugar (or a little less)

·      1/8 teaspoon salt

·      3 cups of whole milk

·      1 teaspoon vanilla extract

·      Glass bowl for cooling

·      Plastic wrap (optional)

Directions:

Combine the sugar, corn starch and salt in a pot big enough to hold 3 cups of milk and leave you room to stir. Add the chopped chocolate. Add the milk. Cook on medium-to-medium high heat, stirring continuously (this is crucial) until the chocolate has melted and the mixture has thickened and come to a very small boil, usually around 7 to 10 minutes. Immediately remove the pot from the heat. Stir in the vanilla. Working fast, pour the mixture into a glass bowl. Cover with plastic wrap, letting the plastic wrap sit right on top of the surface of the pudding. Place in the refrigerator until it has cooled to your liking.
