Diet Quickie: The Carrot

But the benefits of eating carrots go far beyond the chew factor. These orange beauties are a great source of beta carotene, a powerful antioxidant that can be converted to Vitamin A. They are known to aid in digestion, and are thought to lead to less puffy, healthier skin. They can also help kill harmful germs in your mouth, and prevent tooth decay. Plus, they are naturally sweet and can satisfy me when I get a sugar craving. I like to eat them peeled and whole, grated in salads, or sliced and roasted with a little olive oil, salt, pepper and cumin.
